막걸리 🍚 Makgeolli
Ingredients:
5 Cups of Glutinous Rice
1 Cup of 누룩 (Nuruk)
1 Packet of Instant Yeas
2.5 Liters of Distilled Water
Directions:
Wash and Cook the Rice To cook rice add the washed rice and 4 cups of water in a closed pot on high heat till it simmers. Once it simmers put it on low heat for 15 minutes still with the lid on the pot closed
Place the Cooked Rice on a tray and Spread out the Rice to Cool For about 10 mins
Section off the Rice into 8 Sections
For Each Rice section place onto a frying pan and Toast it on each Side for 6 minutes on medium heat. Making a Crispy Rice Patty.
The inside of the patty does not need to be crisp because it is glutinous rice the consistency will be more moist than short grain rice
Combine the Crispy Rice Patties with the nuruk, yeast, and water into a glass Jar or a container.
You can break the rice patties if it does not fit in jar or container
Cover the container the jar or with a cheese cloth or coffee strainer
Even a Napkin is fine
Place the container over a tray and in a cool place.
The active ingredients may cause some of the water to overflow
Stir the mixture after 24 hours with a wooden spoon.
You will notice movement in the mixture of bubbling, don’t be scared it the active ingredients like the nuruk working!
After 3 days the mixture will be done
The first strain will be done with a Mesh Strainer
Place the Mesh Strainer over a bowl that will support the strainer, this will allow
The Second Strain will be done with a Cheese Cloth
Wash the Mesh Strainer and bowl, place the cheese cloth over it, and repeat until smooth
